Notes of cinnamon, pumpkin spice, ginger, and maple aren’t just for coffee anymore — breweries are crafting unique beers and ciders inspired by your favorite autumnal flavors. As the days get shorter and the leaves change color, it’s the perfect time of year for breweries to experiment with beverages that capture the spirit of fall in a bottle.

1. Trillium Brewing | Canton, MA
To celebrate the changing seasons, Trillium Brewing has introduced a new variation on their popular American coffee stout. Vanilla PM Dawn is the result of a collaborative creation with local roasters Barrington Coffee. This stout is infused with their cold-brewed coffee and complementing flavors like Madagascar vanilla, hot chocolate, and caramel. Trillium has also expanded their line of beer-wine hybrids with the Oeniober series, a collection of American wild ales aged on Viognier grape juices. With a balance of earthy and fruity flavors, Oeniober ales are fit for a holiday feast.
2. Maine Beer Company | Freeport, ME
Together with Portland-based brand Coffee by Design, Maine Beer Company recently reintroduced a timely twist on their Pilot 17 coffee stout, an old customer favorite. Their Fall Coffee Stout has a similar flavor profile, and it’s formulated with CBD’s Ethiopian Sidamo Guji Natural Cold Brew. Continuing with their annual fall tradition of brewing a new beer with freshly harvested hops from the Pacific Northwest, they also just released Pilot 19, a pale ale brewed with fresh whole-cone Cascade hops. With notes of dark raisin, pine, and evergreen citrus, their Zoe Amber Ale is another fall favorite, and in November, the company will have a limited release of their popular Dinner Double IPA.
3. Downeast Cider House | Charlestown, MA
Downeast Cider House keeps it fresh and simple, and they have a fall classic on the menu this year. Their Pumpkin Blend cider is a delicious combo of pumpkin, apples, and chai spices. Their tap room series includes a twist on this seasonal cider: the Rum Pumpkin Cider is aged in rum barrels for an extra kick. They also just released their Winter Blend Cider, and with hints of cinnamon, nutmeg, and toasted oak, it’s perfect for relaxing in front of the fire after a long day on the slopes — there’s no better way to enjoy a New England winter.
4. The Alchemist | Stowe, VT
At The Alchemist’s recent Oktoberfest celebration, they served up a limited release of Light Pilsner and Dark Schwarzbier beers inspired by German cuisine — brewed with German hops, these beers were designed to be the ideal complement for bratwurst, sauerkraut, and spätzle. They encourage adventurous connoisseurs to experiment by mixing the two and tasting how the flavors balance each other out. This September, they also re-released their Beelzebub American Imperial Stout. Featuring dark roasted malts, this stout carries a hint of bitterness, but it’s still light on the palate.
